Ionone is a kind of terpenoid, which has three isomers according to the position of double bond. Ionone belongs to rose ketone, which exists in many flower essential oils including rose essential oil. β- Ionone is the main contributor of rose aroma, although its content in essential oil is relatively low. Violet is an important spice chemical used in perfumes, spices and condiments. Ionone comes from the degradation of carotenoids in organisms.
