Saponin are a class of glycosides (polysaccharides) with complex structure, which are widely distributed in the plant kingdom (Rosaceae, Caryophyllaceae, dioscoreaceae, etc.). Vitamin B6 is also known as the "" anti dermatitis vitamin "". One of the B vitamins. Genus pyridoxine derivatives, including pyridoxine, pyridoxal, pyridoxamine, and three compounds, which exist in food in a form that can interconvert. But vitamin B6 in plants is mostly pyridoxine, while it is mostly pyridoxal and pyridoxamine in humans and animals. Human intestinal bacteria can also synthesize pyridoxine, in humans pyridoxine can be converted into pyridoxal and pyridoxamine, while the latter two cannot be converted into pyridoxine. All three have the same physiological activity. Vitamin B6 is rapidly converted to pyridoxal phosphate in humans, and this compound plays an important role in amino acid metabolism as a coenzyme for decarboxylase, transaminase, kynureninase, deaminase, and desulfhydrase.
